EU Regulation 2073/2005 sets microbiological criteria for a range of organisms and foodstuffs, including for Listeria monocytogenes (Lm) in ready-to-eat (RTE) foods. Changes to this Regulation have been implemented in the EU and other jurisdictions applying EU law (e.g. Northern Ireland). In those countries the changes affect the penalty for not having an appropriate shelf-life basis for RTE foods supporting the growth of Lm. A new good practice guide for food business operators and enforcers is available from the Chilled Food Association that is supported by the Food Standards Agency and Food Standards Scotland.
